DIY Cucumber Vodka

Hey Everyone! My favorite day of the week - Thirsty Thursday is here again. You know what else is here? scorching summer sun. Wondering how to beat the heat? Of course you could stay inside all day, but where's the fun in that? Or, you could give this super easy oh-so-refreshing cocktail recipe a try.

All you need is an organic cucumber and a bottle of decent quality vodka (which needn't be expensive, by the way - this bottle of Monopolowa was 11 bucks at Trader Joes.) Just Skin your cucumber, scoop out the seeds, and chop into small pieces. Add into a jar, pour your vodka over and seal. Let it sit in a cool, dark place for 2 - 3 days, giving it a shake every several hours. After it has turned a pale green color, strain through a coffee filter and pour back into the bottle.

It's absolutely delicious over ice on its own, or with a splash of soda. Watermelon or cranberry juice also make a perfect pair. It's arguably the perfect cocktail for these sweltering summer days. So have at it. I know you'll enjoy. x
